Fluffy small rolls filled with spring onions, olives and feta




Delicious small olive breads - rolls with feta cheese, olives and wonderful spring onions.   They are perfect for a school snack and they can be a great company for winter soup!

Ingredients

8 spring onions chopped, green part only
1 tablespoon olive oil
15 kalamata olives pitted and chopped
200 gr feta cheese crumbled
3 cups all-purpose  flour
1 ½ teaspoon baking powder
300 g Greek yoghurt
½ cup butter
Salt - Pepper

How to make

Using a skillet on medium to high heat, add olive oil and  Saute the onions until soften. Set aside.
Coat a muffin baking tray with some olive oil and place it in the oven.
Using a bowl add the flour with the baking powder and some salt. Add butter and rub the butter with the flour until the batter looks like trimmings. Add the yogurt and continue stirring. Finally, add the olives, feta cheese and scallions and stir again.  Fold the dough many times and kneat it inside the bowl.
The dough should be soft and fluffy.

Drizzle some olive oil on top and cover the pan with foil. Set the dough aside to rest for 10-15 minutes.
Preheat the oven to 350 degrees.
Shape balls (you can coat your hands with oil) and place in the hot muffins pan.

 Bake for 25-30 minutes.
