Pasta with bell peppers and light Greek yogurt sauce

I love pasta in combination with Greek yogurt! Try this recipe and you’ll find out what I mean. It’s such an easy and light dish yet so fresh and hearty!



Ingredients

500 g long pasta (spaghetti, linguini)
3 tablespoons olive oil
1 red bell pepper, 1 yellow bell pepper and 1 green bell pepper
1/2 small red chilli pepper or dry hot pepper flakes
1 onion cut into slices
1 clove garlic
little chopped parsley
Salt and pepper
½ cup grated kefalotyri or parmesan cheese
5-6 olives pitted cut into small pieces or slices.

For the yogurt sauce

1 cup of Greek yogurt
60 g crumbled feta cheese
1 tablespoon olive oil
1 heaped teaspoon dry oregano


How to make 

Using a skillet over medium-high heat, add the 2 tablespoons of olive oil and saute the onions, garlic and peppers for 5 minutes. Salt and pepper, stir and set aside. Remove the garlic and sprinkle with Parmesan and parsley.
Prepare the pasta according to their directions.
Using a fork melt the cheese, add the yogurt, olive oil, oregano and stir.
Mix together the pasta with the peppers and yogurt sauce. Sprinkle the olives on top  and serve.
