Smothered Squid in Tomato sauce


So today is the Clean Monday back in Greece, which is a Public Holiday and means that we have 40 days ahead until Orthodox Easter..
Today the Greeks are celebrating with outdoor excursions, children are flying kites everywhere and all the people eat seafood but not fish.
The recipe that I have today is a classic Clean Monday dish.  


Ingredients (4-5 people)

500 gr frozen (or fresh) small squid or small cuttlefish thawed
200 gr plain tomato sauce
2 onions, finely chopped
1 clove garlic, crushed
100 ml dry white wine
2 bay leaves
A few allspice berries
Salt - Pepper
A pinch of Sugar
5 tablespoons olive oil


How to make

Clean the squid thoroughly under running water, cut and discard the center bone and hard lumps under the tentacles. If you buy frozen squid, most likely it will be ready to use.
Place a saucepan over medium heat and add olive oil. When the oil is hot, add the onion with the garlic, bay leaves and spices, salt and pepper and stir untill soften.
Add the squid. Saute for 3 minutes and add wine. Let the alcohol to evaporate, add the tomato sauce, a little extra salt and sugar. Cover and cook for 20 minutes.
Serve with fresh bread!
