Coffee, Cardamom and Double Chocolate Cookies





Here are my cookies that I sent this year for the Great Food bloggers Cookie Swap, I didn't receive all my cookies yet, so I will post about them later on.
It was a pleasure to take  place once again and contribute to raise some money for the "Cookies for kids cancer"

Ingredients (30 cookies)
2 teaspoons instant coffee granules
6 tablespoons water
2 1/2 cups all purpose flour
1 tsp Baking Powder
1 teaspoon baking soda
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
a pinch salt
1 cup butter soften
1 cup brown sugar
1 egg
1 tsp vanilla
1/2 cup dark chocolate bits
1/2 cup white chocolate bits


How to make

dissolve the coffe into the water and set aside.
Using a bowl, combine  the flour with the baking powder, baking soda, cardamom, cinnamon and salt, chocolate chips. Keep aside.
Preheat oven to 350 F.
Using an electric  mixer beat the butter and sugar for 3 minutes. Add the egg mix and add the coffee and vanilla.
cover two baking sheet with parchment, form balls, press slightly and lay them in the pan.
Bake on middle rack for 12 to 14 minutes.
